TASTING NOTES

NOSE: barley tea, brown sugar, chalk, hay, cream of wheat, chocolate oats, velvety chocolate ice cream, maple

PALATE: viscous, caramel, symphony of dark berries, honey oat, chocolate creme brulee, cocoa dusted pecans

FINISH: lingering chalk dryness, sweet white pepper, long, fresh cracked cocoa, unsalted roasted almonds

BEHIND THE BOTTLE

It was time to change it up with Allocated’s first malt pick. If you know The Outfit, you know everyone in that house are malt men. This all started with the slew of phenomenal picks from multiple non-distillery producers, where finishes have their time and place, but unadulterated grain to glass drams are few and far between. Even fewer and further between, is that of single malt picks at this age. Long was truly looking for a grain to glass experience that would have the market entertain something they haven’t had. That only lead him to malt, malt with no sexy finishes that is.

As all picks Allocated does. It takes a lot of time, energy, effort and care. The boiz trust their palates and the process. After multiple revisits of samples, blinds and more revisits- it always ends up being the proofiest and oldest dram served in front of them. This dram was almost an instant winner, as it was reminiscent of Woodford’s Five-Malt Stouted Mash. That chalky, stouty, oaty texture in a dram is what Long thought American malt should be. No bourbon-light in this dram. This truly will be a test for the market to see where the market’s palate is at with regards to barrel proof drams. This isn’t light whiskey. Light whiskey naturally will not drink its proof. This is all gas, no breaks. As The King says, the proof is a grower, not a shower. Meaning, you’re going to get the Spokane suffocation (Kentucky hug), and you have to be okay with a little choking once in a blue moon.

Was this barrel picked because of the hazmat category? No. Was it a bonus? Yes. Allocated is always looking for something different to showcase to the market, so while hazzies are out there, they are generally light whiskies. This dram really alludes the strong cocoa notes with the berries on the palate. It really is a wild dram. Having something that the grain distilled in the spirit was sourced less than 30 miles away from the distillery is also something truly wonderful.
