TASTING NOTES

NOSE: Brown shugga, creme brulee, smoked maple chips, subtle red berries, vanilla extract

PALATE: Viscous, black tea, dark caramel, simple syrup, toasted brown shugga, subtle cinnamon

FINISH: Nutty dryness, dark stewed fruits, coffee, raisin

CASE USE: Rum old fashioned (no sugar, just add your favorite bitters and a Luxardo cherry)


BEHIND THE BOTTLE

Allocated’s first rum select. Why? To show off that rum is damn good and it’s not all about ol’ Captain Mo or Cardi B 151.

Rum is a wild category. Different rules for different parts of the world. But here’s the thing- we didn’t pick this rum because it was from some small family distillery who’s been making rum for five generations doing it the traditional way. We picked this rum because it was just damn good.

The showrunners at ALCTD talk a lot about blended scotch, while they all generally identify as single malt men. It’s truly because there is a beauty in blends and creating something to be bottled that is just GOOD. If you’ve seen our previous releases of J.Mattinglys you’ll understand that the team is always trying to showcase the best spirit in each category with any brand and bottle that deserves the ALCTD badge. Then of course, being extremely transparent about it. We’ve reached out to Papa’s Pilar and it cannot be confirmed nor denied if there are additives added to the rum. What we do know is this girl is a sweetie. Whether she saw a plastic surgeon in her lifetime is not to take away from her beauty.

With that out of the way, let’s talk about Papa’s Pilar. Pilar was the name of Ernest Hemmingway’s boat. Rum is the classic sailor’s drink of choice. Hence the name, Papa’s Pilar, for the name of this rum. The first time the team had the core expressions of Papa’s Pilar, only one really stood out- the sherry cask finish. It was absolutely delicious. Talk about an outfit ran by a bunch of sherribois amirite? So when we were offered a cask of this expression, the answer was a no-brainer.
