NOSE: Rich caramelized oak, subtle vanilla, cherry cola, malt sugar, roasted almonds, stone fruit
PALATE: Viscous port, red grape skins, barrel-aged maple, toasted oak, pomegranate seeds, subtle bitter tobacco, apricot, 72% cocoa dark chocolate
FINISH: Silky oak tannins, malted barley, long linger, subtle mint, subtle cherry, leather, light oil, almond skins
PAIRING: Funky cheeses - Walden from Sequatchie Cove Creamy and/or Mt Tam from Cowgirl Creamery
BEHIND THE BOTTLE
First bourbon pick of the new year! We were thinking about what would be the most appropriate first release in the new year and ended up going with a Kentucky classic. For those of you going through your bourbon journey, you should know the name, Angel’s Envy, who was the true pioneer of cask finishing, before it was cool. Verbatim from the site, the explanation behind the brand name comes from; “the aging process, the 5% of spirit lost each year is known as the “Angel’s Share.” After tasting our finished whiskey, Lincoln joked that we had finally struck a better deal than the angels. And so, Angel’s Envy was born.”
This bottle is one to envy. When we were entertaining a cask, Ylli and Long were seeking a profile that was same-same but different, as always. The juice in the bottle had the maltiest character you’re ever going to get from an Angel’s Envy release. While the cask pick caters to the classic rich maple-y mid-palate everyone loves in the core AE bottling, we are malt men in this house, so with the finish of this pick having that malty long lingering profile, we had to say yes to the dress.
