TASTING NOTES

NOSE: caramelized oak, butterscotch pudding, cinnamonbread, floral perfume

PALATE: full-bodied, viscous, toasted caramel, snickerdoodle, sweet baking spices

FINISH: long, agave sweet oak, leather, toffee, butter pecan

PAIRING: a big ass rock, honestly


BEHIND THE BOTTLE

After the unpredictable success of Allocated’s first agave spirit pick, they are at it again. Looking for something different, they went seeking for an extra anejo…an extra, extra anejo. A call came from Chase (from NULU) where they were talking about the core NULU Reposado expression after having it. This of course led into talks of tequila, which led to talking about barrels. Chase was talking about the stock they had, mentioning that NULU started with agave spirit a while back, as the Founder and President (Keith Hazelbaker) absolutely loves his agave. This led to them having some quite old barrels. After honing down the flavor profile Ylli and Long wanted, the samples made its way to AK.

Long is the one who leads the tequila program at Allocated, and the first agave spirit from NBC was his baby. So, when picking a spirit that would par up to the first pick, he knew he had quite the task on his hands. As everyone knows, Allocated simply doesn’t pick barrels to pick barrels. This lead to a blind tasting, where all the samples were shuffled around and were drank and ranked. The original RyeGave was thrown in the blind as well. ‘Of course’ he said, as he found out which barrel pick he selected. It was the oldest and highest proof of the batch. The smell was a tantalizing high proof butterscotch, but the palate and finish is what made the spirit. Being aged in an ex-Four Roses barrel is just the cherry on the cake. Ylli came in later that night after work and all but confirmed that the 4.5 year was the barrel that slapped the hardest. If you like the RyeGave from NBC, you will absolutely love this expression. 

Let this one open up a bit. She will end up being creamy vanilla caramel agave on the nose, but the palate is where she shines, not showing her proof- but coating the crevices of your mouth with caramel cream and light oak, drying up slightly but lingering around until you ask for more.
